It's completely temperature related. Don't worry about the pressure, only the weight.

800 lbs sounds reasonable. As long as the temperature doesn't change the tank will remain at this pressure until it is just about exhausted.

yeah, its about 800psi now at 62F

im sure when it goes in the keggerator, it will drop a bit.

It will drop. In fact, it may even drop to the red zone on the gauge, so don't let that freak you out like it did me the first time.
