So far, I've had more experience thinking than I've had brewing....you don't think they are mutually exclusive, do you?

72 batches so far,
48 wine, mostly Loquat, peach, plum, prickly pear
23 beers and ciders
1 sauerkraut
1 Tequila, from a prickly pear wine experiment that didn't work. I call it "Prickly Heat"

A five gallon bucket might work well if it fits inside your kettle. Otherwise, maybe a one gallon paint can?

You can siphon feed a counterflow chiller just fine, but it takes a little effort to get the siphon going since you have a very long length of tubing to deal with. Since it's already set up, and it seems that you have limited resources available, I recommend just bending the existing immersion chiller to suit your needs rather than converting it to a CFC.
