I must have just gotten sloppy or something.

1. The yeast smack pack that I pitched never got started with the fermentation process. I actually was going to chalk that up to the fact that I've had it since August and when I smacked the pack it didn't expand. However, auditory inspection of the pack yielded the finding that the yeasts were doing something.

2. The fermentation vessel that I used had something growing in the bottom. Now, I realize that I should have just bleached it to be safe but I used some OxyClean (sans perfume and whatnot) prior to the sanitizing phase. I'm guessing that's where the problem is.


I might post a picture later but it's really not that interesting, just some vaguely mold-like blobs about the size of a BB pellet floating at the top near the sides of the carboy.

It sucks because I brewed it on Veterans' Day but what are you going to do? At any rate I just thought I'd post this and see what others think.

Recipe:

Warbler Pale Ale kit, London 1028 Yeast

Could have been the water too, I suppose. I used some store bought bottled water that I had sitting in the garage for a month. I've never let it sit there before.

All goes to show how many factors are at play when making beer.

London Ale yeast is a very highly flocculating yeast, it gathers into snot balls rather than sinking to the bottom. You may be ok

+1 I agree with Joe on this. More than likely, the beer is not infected and what you are seeing is clusters of active yeast which will often appear just as you described. Don't dump it! Wait for it to finish out and give it a taste and smell test.

This doesn't sound like any infection I have seen or heard about. You should post a picture. What color are the blobs? Not that much difference between mold and yeast...

+1 to the other dudes.

Thanks for the quick reply. My first thought would have been yeast rafts as well except I popped this one on Friday and this has never happened before. The carboy is sitting at 64F at the moment which is well within the 60-70F range that is written in the instructions. I still think there's a problem with the yeast and in 2 more days I might just re-pitch with another smack pack and see how that goes. Unless you guys convince me otherwise.

what was the OG and what is the current SG? how many days since pitching?

Looks like infection to me, but you really need to taste it to know if it's going to be ok to process further. Even if it's infected, it might be fine to drink. And those photos are not definitive.
