Default Liquid tight temp probe

I'm building a RIMS and already have a temp probe that came with my Ranco, so I don't wanted to have to get another probe, but I do need some ideas on how to make it liquid tight.
My plan is to have a copper tee on my heat chamber with one end for the probe and the other for recirculation. I'm using 1/2" pipe and am thinking the easiest/cheapest thing to use is a #2 drilled stopper, but I don't know if it will withstand the heat. Any suggestions and/or pictures would be helpful.
