Default Help with controller

Hi All,

I get my ranco two stange in the mail today. I have read through the online manual and while I understand the mechanics of it, I am not really certain about how to figure out the setpoint and the differentials.

I have a belgian white I am going to pop my thermowell into. Opt ferm temp is 67-74. Can someone help me in understanding what I should set these numbers to for a good ferm temp but also so the compressor on the fridge isnt kicking on too often.
