Default False Bottom in MLT

This may be a really dumb question but I'm trying to figure out how a stainless steel false bottom works in a MLT.

I'm guessing the false bottom keeps the grains above the spigot while allowing the wort to flow through the SS mesh and out of the cooler. But what is up with the elbow piping coming down in the center of it? I'm obviously missing something...

The false bottom actually sits lower than the spigot. That tube is what gets the liquid from below the false bottom to flow into the spigot. It's called a dip tube or siphon tube.
