Default Extract brewing in a keggle question

Is it practical to brew with LME or DME in a keggle with something like the hopstopper installed. I am concerned about not being able to scrape the bottom with my stir spoon to prevent scorching. Is this even a concern? Just thought I would ask before getting a hopstopper.

Sure you can do it, after you have heated your water up enough to disolve your lme/dme turn off the heat and pour it in slowly while stirring. Once you have it disovled you can get the heat going again.

Relax and have a homebrew...

As an alternative, you could mix the extract and an equal amount of boiling water in a separate pot.

I dissolve my LME and/or DME in a gallon of water in a smaller pot while the water in the keggle is heating up. When it's well and truly dissolved, I add it to the keggle with stirring. So far, no problems with scorching.
