Default 60q stock pot vs 60q sauce pot

Any significant difference or benefit? Stock pot is tall skinny and sauce pot is short and fat. I guess I would assume that a sauce pot would heat up quicker?

Short and fat will increase your evaporation. That's why stock pots are shaped that way compared to sauce pots. You want sauces to reduce, but not soups.

Great! Thanks! That Royal Palm link is real nice too. Just ordered a 60q for $42 with tax and shipping.

Remember that tall skinny pots have more of a tendency to tip over.
