Default 2.5" stem or 4" stem

Quick question before I order from bargain fitting. I am going to install the thermometer sight glass on my brew kettle and dont know if I should install the 2.5 or 4" thermometer. I use an immersion chiller and would rather not have anything to far into the kettle. Really excited for the upgrades just want to do it right once. THanks

I think the concern with the stem length is penetration. In order to measure the true temperature of the mass of liquid, you have to have enough length of your probe to penetrate the vessel deep enough so it can feel the warmth sufficiently. Some guys say that you will need at least six inches of probe to do this, but Im pretty sure (from the observation of short probes getting the job done, not necessarily my case or misfortune) that the shorter probe will satisfy requirements.
