If you keg you could purge the head space with CO2. If you don't keg you could get one of those "wine saver" spray cans of nitrogen to purge the headspace.

Whole foods in houston has 2.5 gallon carboys filled with spring water for 9.99 + a ~$15 deposit for the bottle.
