Wicked Winter Brew
Brewing up the "Wicked Winter" Ale today. This is the third or fourth time I've brewed it, but the first time I've done all grain. I've used the base recipe for other beers, however. Mash the following in 3 gal of water at 152F for 60 min: 7# pale 8oz 40L/60L crystal mix 4oz chocolate 8oz carapils I boiled about 4 gallons of water to heat up the tun. Then I drained and added another 6 gallons of boiled water. I did not keep track of the time I let is sit, unfortunately. I heated my mash water to 173 degrees and let it fall to 167 before dumping in the tun. The temperature check after dumping the grain in was 154. Right now it is holding at 152 with 37 minutes to go. Temp dropped a little so, I added 2 quarts of boiling water somewhere near the last 15 to 10 minutes. This got the temp back up. On my second round of sparging right now. Decided to let the grain sit in the sparge water for about 21 minutes before I did the Vorlauf. For the first sparge I added almost 2 gallons of 190 degree water, then I stirred the grain for 5 minutes before I let it sit. The temp in the tun was about 152 degrees, and I know that it should be 168-170. For the second round, I will stir it after I let it sit, however, the temp is still 152. Finished the second Vorlauf, and got about 6 gallons. Back from running to the doctor's office. Gravity reading is 1.036 at 111 degrees. Starting the boil. Added about 1.20-1.25 oz of Goldings (4.9%) at 60 minutes. Then added 0.80-0.75 oz Goldings, 1/2 tsp of McCormick Cinnamon, and about 1/2 tsp of freshly ground nutmeg at flame out. And again I forgot the Irish Moss. Right now I am cleaning equipment and waiting for the wort to cool. Got 5 gallons. Pitched British Ale Yeast. OG 1.050.
