Warrior IPA 2-7-12
On 1-27-12 I transferred the 60 minute to secondary and dry hopped. the 120 minute esque (which i'm now calling warrior iipa) went fairly well. I poured the warrior ipa right on top of the 60 minute yeast cake after collecting .5 gallon for a wlp099 starter. I saw visual fermentation after about 3 hours. Overnight my 6 gallon carboy filled with 4 gallons of wort blew the airlock sky high. I transferred the warrior into a fermenting bucket by means of a crude dumping that also splash aerated. I Added 1.5lbs of honey after 36 hours, then one pound of sugar ever 12 hours for 36 hours. I added back the wort with the wlp099 and after several aerations and some tlc the gravity thsi morning is at 1.011 and the abv is 17%. I think i'm gonna stop there
