I was washing bottles last night around 10 (late already . . . but they'd been soaking in Oxy for 2 days) when I decided to take a reading on my Pineapple wine. Lo and behold it had fermented out! (I wasn't surprised). My hydrometers were reading 0.990 and 0.992, which seemed pretty low to me (shouldn't detritus and lots of carbonation bubbles raise the SG?). OG was 1.090 or so. Meanwhile, I have a 3/4 bathroom work area with a small, cheap end-table (carboy stand), a shower filled with equipment (glassware), a 10 gallon bucket of pineapple wine, an empty carboy, two full carboys (one in a swamp cooler), and about 4-6 cases of empty bottles. (I recently got a lot of bottles from family - about half done with the cleaning & label removal). So after scrubbing and rinsing the bottles I'd soaked (about a case and a half) I removed the swamp cooler (APA has definitely fermented out) and lifted the 8~9 gallons of wine onto the end-table for siphoning. I filled a 6 gal carboy and two gallon jugs AND cleaned everything up just in time for bed at midnight. The wine tastes great... though it will definitely need degassing and sweetening! (Dry pineapple wine only has a hint of pineapple flavor - much like pineapple soda) Remember... we have a few weeks old baby... who spit an ounce or three of formula all over her mother in bed. So it was back downstairs for me where I re-fed my daughter, burped her as well as I could, and brought her back to bed. At that point I wasn't remotely tired, so I watched this week's "Covert Affairs" and had a Hefeweizen. It wasn't a bad night at all... just (yet another) late one!
