First Brew Impressions

So I now have my first extract kit locked down in the primary fermenter and it is bubbeling away. Hopefully it turns out well. Kit: AHS Belgian Dubbel Liquid Extract Yeast: White Labs WLP500 So I made some mistakes while brewing: #1. Didn't give everything a solid 30 seconds of contact with the Star San before considering it sanitized. #2. Heated the yeast too high before pitching. #3. Not enough boiled top-off water ready to pour into fermenter. #4. Not sure my boil was high enough and used lids to try and compensate. #5. Poured the wort too high and that caused a vacum which sucked about 2 shots of vodka into the fermenter. Next time cool to ambient temp. Observations: Brew was over at 4pm. Didn't notice suction until the next day. 24 hours in and the yeast started forming krausen. 48 hours in we have alot of bubbles and krausen forming. 72 hours in and the airlock smells alot like apple cider. Carboy temp has risen a degree to 72 so I dropped the ambient 1 degree to 67.
