Christmas Brew

Started new brew last week. NB Nut Brown with "additions". To the boil I added 1/4lb of molasses, 1/4 lb of honey and 1/4 lb of corn syrup at 10 mins to flame-out. Added 1/2 oz Willamette pellets at flame-out. I steeped the grains at 152 degrees for 15 mins then took the up to 170. I added 2 cups of instant oats to the steep. OG at 1.052 I re-hydrared the Nottingham Ale Yeast with 2 tbs of malt extract in 1 cup water. Lively stuff. Active fermentation in 8 hrs. Very aggressive and lasted about 36 hrs. I will leave it in primary for 14 days and move to secondary for 7 days before bottling. Will start to drink around Christmas.

Moved to secondary on Wed. Tasted good. Taste stayed in mouth longer...must be the oats. FG at 1.01. Great Thanksgiving. I took a 12 pack of the multi-grain. It didn't last long...Longer conditioning helped this brew. I was
originally not happy with results but it came around after 5 weeks in the bottle. It took that long to lose the "green" taste. Dried out well and separated the flavors. Good nose in the glass. I picked up about a case of
good bottles from the family. De-labeled and washed them before work this morning.

Bottled the Christmas brew yesterday. It was clear, dark, and dry. I could taste a slight amount of molasses and the addition of the late hops. Used my new bottle filler and spigot. Worked great and took me much less time and
much less air while filling bottles. I used corn sugar to prime for the first time (used inverted cane before) and am hoping to taste the difference.
I got 52 bottles out of the batch but some of the bottles were different only
holding 11.2 oz each. A Hoegaarden bottle; really cool looking. Drank from that bottle at Thanksgiving and liked the beer. Its making me want to try a wheat. Going to give the bottles a shake......

Couldn't wait... I cooled and opened the Christmas brew. I expected it to still be a bit green, but I wanted to know about the carbonation and mouth-feel of the oats added to the brew. Even at only 10 days bottle conditioning
this is a good brew. The oats and molasses made a huge difference in this NBA. The head retention is better than I have had. The clarity is great. Caramels are jumping out. The addition of the molasses is noticeable but not
overtaking. It holds at the end then just goes away. If I had used more it may have been too much.

I'm not sure if this is the work of the additions to the NBA or the use of the corn sugar priming. I don't want to go back to cane
sugar to find out either.

Going to have another.
