I'm lazy and an idiot. Haven't built up my starter for Sunday.
I don't care what BrewPastor says, thank God for dry yeast!
Thinking now about doing a little summer brew, something like a little beer that BierMuncher made a while back with some peppercorns. I've got a couple ounces of Grains of Paradise that I could add to a Saaz- and Tettnag-hopped pale ale. Pilsner malt, maybe a pound of Vienna for a little character. US-05 to make life easy.
Either that, or maybe the Ginger Beer that Yuri was designing a couple months back. Anyone want to persuade me one way or the other? Looking for something that's a little spicy, but smallish (1.040ish OG) and quaffable.

I'd go with the sazz and tett hopped PA, personally. Some GoP adds a nice spice to all light brews. I've never used peppercorns in a brew though - if you do, let me know how it ends up!

Well, I'd be using the GoP in lieu of the peppercorns that BM used. I think I'm leaning that way...

Either way. I've been very happy with the US-05, and I like to keep rotating through my stock.
I'm thinking nothing more than just the Pilsner (continental) malt, a pound of Vienna, no crystal, nothing else... single infusion, make life easy, probably around 152°. 1040-1045 OG (I'll target 1040 at 80% effciency and see if I hit 90% again). Maybe 25 IBUs. Hop additions at 60, 10, and 1 minute, add the GoP at 5 minutes. Thoughts? Looking for simple and just a wee bit spicy. |

I *could* brew the American Strong Ale I have rolling around in my head, too. I've got everything that I would need.
Actually, if I get there early enough... I could brew both of 'em! |

OK, I've decided.
6# continental pils 1# Vienna 0.5# Crystal 20L Magnum for bittering Hallertau for finishing 2 grams Grains of Paradise US-05 Should be around 25-30 IBUs, OG should be 1.037 if I hit 75% and 1.042 if I hit 85%. Small, clean, spicy. |

Efficiency came in pretty good - mid 80s. Had a little bit of trouble with losing a bit too much to the keg's deadspace, have to figure out why. Fermenting like a mofo - that 1056 Glib was kind enough to donate REALLY took off. Only collected 5 gallons in a 7 gallon bucket, and I've got junk in the airlock this morning (Fermcap, here I come).
Those Grains of Paradise/Seeds of Paradise; get some, grind them up, and take a smell - they're alsolutely wonderful. Peppery, but with some fruity (I've heard "citrus") overtones. I need to incorporate those into my cooking somehow, and I'm thinking they'll really shine in this beer. |

Why the low gravity?
I only make a brew with that OG if it is intended for a Saturday bbq or some other situation where I don't want friends to get arrested. Otherwise I shoot for 1.050 - 1.060, might as well get a bang for the effort. Just curious. |

I'm thinking he wanted something tasty that he, et al. could drink a bit of and not get hammered. It isn't always about the alcohol, that is sometimes just a pleasant side effect

The beer came out really nice, if a wee bit "hollow." I love the grains of paradise, but I really should have put some orange peel in there to flesh out the flavor a bit. Next time (which will be soon).
