Holy Carp we have gone crazy

So I am sitting here on a sunday morning labeling 4 batches of beer because we have gotten to the point that we cant keep track anymore... I know such a problem to have! I just had to pat myself on the back though as I just cracked another one of my blackberry wheats and I can't believe how it turned out. It is so light and crisp with just a hint of blackberry flavor. The only negative was I brewed 5 gallons, my friends and neighbors along with myself and the SWMBO have mad short work of that batch......

Mr. Beer Success!

On Superbowl Sunday, I opened my first batch of Mr. Beer Canadian Draft. It was a little bit light on the carbonation (I used carb tablets instead of sugar), but overall it tasted great, and continued to give off very tiny bubbles the whole time I was drinking it (which of course didn't take long). Here are a couple of pictures from the milestone event:

My Apfelwein Threw Up

So memo, when making Apfelwein in a 5 gal Carboy using wheat yeast leave headspace or use a blow off tube. This brew is about the coolest I have seen as far as activity and bubbling unfortunately that meant cleaning up bubbles and sticky foam that bubbled out past the airlock and down the sides of the bottle. So after clean-up and a quick trip to the hardware store we have solved the problem. Blow-off tube installed everything is continuing to roll on.

So today we add an additional fermentor as well as begin the Apfelwien in one of my glass carboy secondaries which I can't wait, just need to roll on for four weeks . Pretty crazy starting that one off, OG was 1.072 and I am using a hefe yeast from white labs, the LHBS was out of Ed's specific yeast which is a bummer, I wanted to try and keep this batch as close to the original as possible. Other than that everything was done according to recipe. I used Costco apple juice which smelled great but...

First Bottling

So last night was the first bottling of the Christmas Mr. Beer kit and the initial taste was quite good. I was surprised to say the least. We had the Canadian Draft which seemed a little on the weak side as far as alcohol was concerned so why not bump it up with the addition of a cup of honey... Seemed to work, the post fermented brew was crisp, yet a slight hint of the honey flavor on the back of the pallet.
