I'm in the process of brewing all 80 beer types. So far, since starting the process, I've brewed about four to varying levels of success. Wish me luck!

Percents and Alcohol

Sugar's volume relates to the space it takes up, not to how many molecules it has. Sugar's volume in aqueous solution is nearly zero.

The fermentation reaction is this:
C12H22O11 +H2O + invertase →2 C6H12O6
C6H12O6 + Zymase → 2C2H5OH + 2CO2

Which is to say, for every equivalent molecular number of glucose molecules, yeast create two molecules of ethanol and two molecules of CO2. That is only the approximate conversion rate...

Half-Gallon Batches Suck

So I bottled all those half gallon batches, and I gotta say, SWMBO was right: it's not enough beer. To have brewed and fermented and wait patiently, then to bottle and only end up with four beers... it's damn demoralizing.

So I'm not going to brew half gallons anymore. I'm brewing at least a gallon or I'm not bothering. Actually, if I use the 4L Gallo wine jugs as fermentors, then I can probably get a full gallon out of it, but then again, the yeast cakes in those tiny carboys...

Cancellation of 80 beer project

As much as it pains me to do so, I really have no choice but to cancel my 80 beers in 80 weeks project. I'm still going to brew all 80, but it will take me longer than two years to do so.

It's a good thing for my PhD education, but a bad thing for my homebrewing. I also have to cut out my shifts at the ER, so it's hurting my money too!

Still, I was lucky to get this chance that I got, because I have no doubt I will get at least one publication in the next year out...

Ugh! Crap Kettle

So I ordered the variable temperature electric kettle from a well-known maker of men's gadgetry. I plugged it in. It didn't work.

The box had a note. "Don't return to store, call us!" I called them. They didn't give two squirts. They didn't give one squirt. Not a single squirt was given that day.

Eff them.

I'm returning it to Amazon. Unfortunately it will not be available for mashing this Saturday, and my brother wants me to do something...

Grinding grain

Okay, so to make a weizenbock, you are aiming for about 8% ABV. Every 5% of ABV requires about 1 pound of fermentables per gallon... so 8% should be about 1.5 lbs of fermentables. But hold on a second. Weizenbock is a malty beer, so you mash at a higher temperature (remember the MALT rule?) and therefore attenuation is less. You need more than 1.5 lbs. You actually need about 2 lbs.

I don't have a grain grinder. I ordered the grain from my LHBS uncrushed, because I was going...
