First Blog - 4th Batch

Greetings fellow brewers! -- from a n00b brewer in training...
Whether you are a new brewer or an experienced one, you may find my blog interesting -- if I'm able to update it the way I intend to.
I just brewed my fourth batch today, and my first batch is still bottle conditioning, so I don't (yet) have the ability to discuss the end results of my brewing. However, I've done a lot of research over the last couple months, and I'd like to share some things I've experienced, but haven't found discussions about online yet.
This post is about my Brew #4 I made today -- Dead Guy Maibock Clone from apexbrewwares.com. ( http://www.apexbrewwares.com/Recipe-Kits/Dead-Guy-Clone.html )
Rather than make forum posts with questions, I intend to update this blog with the status of this brew as it evolves.
For comparison on brews #1 and #4, I should note that brews #2 and #3 were the same recipes that (so far) appear to be fermenting as intended. Comparisons will be noted as appropriate.

Brew day went fairly well, EXCEPT, when I took my pre-pitch OG reading, I was at 1.071, with the recipe goal of 1.063.
I used a smack pack (Wyeast PacMan 1764) and gave it 4.5hrs to get ready, and when I shook it before pitching, it sounded very active.
("Always use a starter" -- got it. But I'm livin' on the edge, on a budget, learning the hard way, and got empty carboys calling my name.
)
Without a starter and a overly high OG, it seems there's a good chance I underpitched. So, if I am able to get back here to update this blog, I'm going to report on how things evolve.

My main reason for posting this is because my first batch (brewed 6 Oct, 11) had a stuck fermentation (most likely due to inadequate wort aeration and lack of patience resulting in racking to secondary too soon,) but I followed it through and it is bottle conditioning now. I think these two batches will provide an interesting set of perspectives on n00b brewing that I haven't seen discussed anywhere yet.

Quick update:
Batch #4 has taken off well. Ferm temp has been solid at 69 degrees and I just had to install a blow-off tube. Lag time was approx 16 hours, krausen looks good. |

Batch #4 update -- had a pretty solid fermentation so far - removed blow-off and re-installed airlock about an hour ago, still have active airlock activity. Doesn't look like I lost any wort/beer to the tube, just a bunch of tart, hoppy tasting dry stuff.

Update: Took this brew to a club competition yesterday. Tied for third place out of 11 brews!
