Questions on sweet wittebrew

Hey all.

I am new to homebrewing. I am trying out a Wittebrew and I just siphoned it over to secondary. I took the gravity and alcohol measurements and tasted it. To my suprise, it was pretty sweet. I know this style of beer is known for its sweet and mellow light pallet. I was just about to take the Balling when all of the sudden my elbow knocks over the cup that had my hydrometer in it...it shattered....:/. SO, how do I know how sweet is too sweet at this stage?
